As I navigate the challenges of healing a leaky gut, days 19 and 20 have been all about nourishing my body with wholesome foods and managing the chaos of caring for sick kids. It's been a weekend with sick kids and home crafts. I've been extremely craving coffee and chocolate, but have managed to stay away from my vices:-). I continue to spend a lot of time in the kitchen and my husband is happy every time he sits down at the dinner table. The kids aren't as flirty though, especially now that they've been feelin unwell. But they certainly eat more fruit and vegetables and less sweets now compared to what they did around Christmas.
Breakfast
Raspberry smoothie
Ingredients
0.5 dl frozen raspberries
0.5 dl frozen strawberries
0,5 banana
0,5 avocado
1 dl papaya, mango, pineapple
2 dl cold tea
Instructions
Peel and slice the fruit. Put all the ingredients in a blender. Enjoy!

Hearty meat stew
Snacks

Dinner
Butter poached fish with pear slaw
Ingredients
800 gr talapia (or other white fish)
150 gr butter
Salt
2 pears
2 carrots
1 tbsp apple cider vinegar
2 tsp sesame oil
Instructions
Start making pear slaw, it's good to leave it in the fridge for a while. Peel the pears and carrots. Cut into long thin sticks, place in a bowl, add apple cider vinegar and sesame oil. Mix well.

Melt the butter in a frying pan and add a pinch of salt. Add the fish.

Let it cook in the butter on low heat for about 10 minutes before turning it over and letting it cook for another 8 minutes. Enjoy!

This was good! Felt like a luxurious weekend meal. Definitely one of my favourites so far. Probably tied with Fish tacos with mango salsa.

Ingredients for cauliflower rice
1 head of cauliflower
Avocado oil
Salt
Instructions
Process the cauliflower in a blender until it looks like "small grains of rice". Fry the cauliflower in the oil for about 10 minutes, salt to taste. Enjoy!
The cauliflower rice was very tasty with the home cooking, which in turn tasted good, despite its appearance. The kids liked the cauliflower rice too, so it's sure to become a family favourite for various stews. A great alternative to rice, pasta and potatoes.
